Woolworths, a leading South African retailer, is seeking a dedicated and detail-oriented Quality, Hygiene & Stock Controller to join their Head Office Catering Department in Cape Town. The successful candidate will play a key role in ensuring operational and hygiene excellence across the department. Key Responsibilities:
As the Quality, Hygiene & Stock Controller, your core duties will involve overseeing cleanliness, stock management, and ensuring food safety protocols are consistently adhered to. Specific responsibilities include:
Kitchen Hygiene and Cleanliness: Coordinate the cleaning of the kitchen and ensure that all areas are covered with appropriate cleaning equipment and products.
Early Morning Breakfast Preparation: Assist with the setup and preparation of breakfast services, ensuring all food safety standards are met.
Stock Management: Oversee the stock in refrigerators, ensuring that products are stored correctly according to cold chain disciplines.
Temperature Monitoring: Conduct and record routine temperature checks on food and storage areas, addressing any temperature discrepancies immediately.
Ingredient Issuance: Issue both wet and dry ingredients needed for daily meal preparation, ensuring adequate stock is available at all times.
Stock Shortage Reporting: Inform the Cooks Team Leader of any stock shortages, including consumables, and assist in sourcing required items.
Menu Updates: Communicate any changes in the menu to the Cooks Team Leader and ensure that preparations align with these updates.
Ad-Hoc Audits: Conduct audits in the Catering department as required, ensuring adherence to company standards and food safety regulations.
Audit Preparation: Assist in preparing the department for the Bi-Annual audit, ensuring all documentation and processes are in order.
Daily Kitchen Checklist: Complete the daily kitchen checklist, ensuring all operational procedures are followed meticulously.
Supplier Relations: Maintain good communication with external suppliers, particularly those involved in maintenance and pest control.
Issue Reporting: Report any urgent issues to management in a timely manner, helping to resolve problems quickly and effectively.
File and Document Maintenance: Ensure that all necessary files and documents are maintained for auditing and compliance purposes.
Continuous Improvement: Monitor and review operational processes regularly to maintain high standards and improve quality where necessary.
Minimum Qualifications and Requirements:
- Education: Matric (Grade 12) qualification is essential.
- Experience: A minimum of 1 year’s experience in a similar role within the hospitality industry, corporate kitchen, or canteen environment.
- Technical Skills:
- Strong understanding of audit processes and cold chain disciplines.
- Proficient in English, with the ability to write detailed reports.
- Computer literacy is essential for documentation and reporting.
